Shrimp Ceviche

Shrimp ceviche is the one snack that I love to have on hand. I usually do as I always have a bag of frozen shrimp in the freezer and tomatoes , jalapeños in the fridge to name a few. This dish is super easy to make. I make mine with a little Colombian flare! You may be asking what makes it Colombian? Well, I use a little ketchup and mayo in my ceviche, you can definitely leave them out but I suggest you give it a try. Ingredients

  • 16-18 shrimp
  • 2 plum tomaotes
  • 1/4 cup red onion diced
  • 1 jalapeno diced
  • 1 tomatillo (optional)
  • salt and pepper to taste
  • 2 tablespoon ketchup
  • 1/2 tablespoon mayo
  • juice of two limes
  • cilantro to your liking (optional)

Directions

  1. In a med-large pot, bring water to a boil. De-shell the shrimp.
  2. In the meantime start dicing the veggies; tomatoes, jalapeños, onions etc.
  3. In a medium bowl, mix everything; the diced veggies, s&p , ketchup and mayo , lime juice and cilantro. Mix well and put it in the fridge.
  4. Water should be boiling at this point, throw in the shrimp with a little chili powder (1 tablespoon) if you have it on hand. Cook shrimp for about 7-8mins. Shrimp should be red in color.
  5. Grab another bowl and give them an ice bath. Place about 6-8 ice cubes to the shrimp and cold water. Let them cool for about 10 mins.
  6. Remove the cooked shrimp and chop them up. Throw them in the mix you have marinating in the fridge. Leave it in the fridge for about 15-25 mins so that shrimp gets all the flavors from the mix you made before.
  7. Enjoy with tortilla chips!
